Green beans drop into the pre-heated drum. Grassy, dense, pale — nothing you would recognise as coffee yet.

Why a roastery

Coffee is a crop before it is a drink.

Most cafés buy roasted coffee and hope for the best. We start earlier — with green coffee, chosen by origin, and a roasting drum we control ourselves. Single origins like Kaffa Ethiopian sit next to our own house blend, each with its own roast profile.

That is also why the counter looks the way it does: retail bags of our beans, bottled slow cold brew, and a bar team that pulled the shots on the same coffee they helped roast.

The roast is identical on both sides of the Nile. The scenery is not.
